The dough is frozen.  The don't even use eggs, but egg substitues.  And the cheese is also a cheese substitute.

Agree. I wouldn't set foot in a Pizza Hut in the US, why would anyone do so in HK?

By the way, if you're looking for a decent slice of NY style pizza in HK, check out Duke's Deli on Des Voeux Rd, ChinaChem Bldg. Remember I said 'decent' - not great, but decent, especially compared to the alternatives. They also have calzones and do meatball and chicken parm heroes, all not bad.

MY QUESTION : Is it really frozen dough, or is it actually cardboard.
It tastes lke cardboard to me,

Oddly I like the Pizza Hut in HK much better than the PH in the US (which I would avoid like the plague, but perhaps thats because I am from the NY tri-state area and we had about 10000 better alternatives)

I would guess HK PH's dough is a dry mix or it's made locally offsite and shipped to them frozen like Pret says.  They may indeed use an egg substitute which is why is may have that weird consistency, but I think the cheese is a real milk product just super-processed.  Even some "real" pizza in US does not often use real unprocessed mozzarella chese.

The best pizza I have had in HK is Pizzeria Italia on Mosque St in Central where they actually do use real mozz.  It's a thin crust but nice and chewy, and the sauce is very nice.  I always get extra cheese.  Only trouble is it's definitely not cheap when compared to PH

I am really looking forward.  It's hard to have a decent pizza and pasta in Tung Chung. Shocked

Olea in the Novotel also has great pizza. Although more expensive, they do only use premium ingredients. Alsao available for take=away, but you must collect. If you go there for a meal, try the Osso Bucco, it is fantastic !!

ChefKev -

You would do well to open a Bistro place down at the Bazaar. Preferably at the back with outdoor seating. Something like the Zen rest. concept at SVC

A one page Menu would be perfect to keep it simple, but delicious

Back on topic,

I go the Gallery with friends every few weeks and the food is fantastic.  The steaks are Australian black angus and very reasonably prices compared to other steak joints in hong kong (I highly recommend the Ribeye).  The grilled tuna is sushi grade, great wine selection, and the tapas spread is to die for.  The Pizza I've had was also top notch.  Make reservations ahead of time if going on the weekend and they are closed on Monday.  The only downside I've seen is the commute over to Tong Fuk and the serving time is a bit lengthy because Dave the restaurant owner does most of the cooking and waiting.  Plan on being there for at least 1.5 hours but the ambience is very nice outside.

Yes you can drive.  Take Tung Chung road to South Lantau road and take a right.  Tong Fuk is about 7 minutes down the road.. gallery is on the right hand side in the middle of town

You need a permit to drive over the hill to south Lantau and they are only available to residents
